Background of the Shop
Gerai Kitai is a Iban food stall that is own by Mr. Nathan Anak Nyawai and Mr. Kalong Anak Merayang. They are fresh graduate students who started this business in 2015 with the purpose to sell Iban traditional food such as "kasam ensabi", "jukut", and "tempoyak." Although the food stall is only with a pair of table, they manage to gain around RM200 to RM300 in a week. Gerai Kitai food stall seems to be popular around the neighbourhood in Taman Sejijak.
Historical Background of the Foods
"Kasam ensabi" is actually a mustard pickle. It is a traditional food that is very popular at rumah panjai and one of Ibanese favourite food. It has sour and salty taste that always be eaten with hot rice. Now, "kasam ensabi" has inherited from their ancestors and continues to be the Ibanese favourite until to the current generation. More people like to eat this food.
Meanwhile, "jukut" is pickle of small fishes that is black in colour. The Ibanese make that pickle so that the fish can be kept for a long period of time. It has salty taste and like "kasam ensabi", it will be tastier to eat it with hot rice.
Lastly, "tempoyak" is fermented durian flesh. It is made by taking the flesh of durian and mixed with some salt for days for fermentation. It is usually made during durian season, when the abundance and excess production are made into fermented tempoyak.

What makes Gerai Kitai special is it is located where most of the residents that live in Taman Sejijak is Ibanese and the Ibanese like to eat their foods. "Kasam ensabi," "tempoyak," and "jukut" are hardly to be found in the city. Besides that, we cannot find those foods in general store or retail store in Kuching.
Furthermore, most people can only get those foods when they go to their village where the main ingredients for the foods are available at the village. Therefore, it makes Gerai Kitai is popular among people that are not only Ibanese that like to eat either "kasam ensabi," "tempoyak," or "jukut."

We think the shop is good because it sell traditional foods that are rarely to be found in the city. Even though the stall is small, but for us it is awesome because they can generate many profit to them.
